Gingerbread

Ingredients

    425g Self-Raising Flour
    250g Plain Flour
    15g Ground Ginger
    5g Ground Cinnamon
    5g Ground Mix Spice
    185g Butter
    185g Brown Sugar
    25g Pure Icing sugar
    170g Golden Syrup
    2 Eggs (55g each)

Method

    Preheat oven to 160°C
    Combine flours, spices and sugars in a bowl, then add soften butter and mix until it resembles breadcrumbs
    Combine the golden syrup and eggs in a bowl then add to the dry mixture
    Roll the dough till it is 5mm thick and bake for 11 minutes for cookies or 13-15 minutes for gingerbread house.

    100g Egg White
    500g Pure Icing Sugar
    2g Citric Acid
