Chocolate Cake

Ingredients

    100g butter
    90g chocolate (45%)
    50g espresso
    17.5g cocoa powder
    130g milk
    70g caster sugar
    70g brown sugar
    150g self-raising flour
    1 egg

Method

    Preheat oven to 140°C
    Melt butter and chocolate together
    Whisk cocoa powder into espresso then add milk
    Combine butter and espresso mixtures together
    Add eggs
    Add flour and sugar
    Divide into 3 6in cake pans (250g in each pan) and cook for 32 minutes or 160°C for 20 minutes

Multiply ingredients by:

Ganache (enough for 3 layer 6 in cake)

    300g milk chocolate (55%)
    100g dark chocolate
    270g cream
    30g glucose syrup
